Starting as a caterer in 2013, she expanded her business with a seasonal food truck that’s a familiar sight at festivals, concerts, and community gatherings across the region. Keysha “Nikki” Searles: The Vegan Visionary

Nikki Searles, the visionary behind Sunshine Vegan Eats, began her plant-based culinary journey in 2017. Inspired by the healthy eating habits she observed in the Caribbean, Nikki has dedicated herself to creating delicious, nutritious vegan meals that challenge the perception of vegan cuisine. Recognized as “The Best Vegan” by Buffalo Spree in both 2022 and 2023, Nikki’s innovative dishes, like the Impossible Niyah plant-based steak sandwich, have earned her a loyal following. Her dedication to health and sustainability resonates deeply within the Ellicott District community and beyond. Nikki’s passion for juicing and meal prep services reflects her commitment to making nutritious options accessible and appealing, encouraging others to embrace a healthier lifestyle.

Evetta Applewhite: The Culinary Alchemist

Evetta Applewhite found her second home in Buffalo at the age of 14. Her culinary journey began at her grandfather’s restaurant, Eddie’s Texas Hot, where she developed a passion for cooking. Evetta’s career at the Oakk Room on Main Street in Buffalo started in 2012, where she worked her way up from server to kitchen manager. Her unique blend of Caribbean and Southern flavors has made her a beloved figure in Buffalo’s culinary community, known for her ability to create dishes that are both comforting and innovative. Evetta’s culinary creations are a testament to her dedication and love for her craft, with each dish telling a story and leaving a lasting impression on her patrons.
